Deep frying foods produces chemical reactions such as hydrolysis, oxidation, and polymerization, which changes the chemical composition of frying oils and release free fatty acids and free radicals that combine into polar compounds containing monoglycerides, diglycerides, and polymeric triglycerides. OleoTest detects these polar compounds, helping you to know when to replace your frying oil.
